Chile Rellenos Casserole
1 27 oz can of Ortega Fire Roasted Whole Green Chiles
6 eggs
2 C Half & Half
2 C Shredded Monterey Jack Cheese
2 C Shredder Cheddar Cheese
Open can of chiles and clean out the seeds unless you like really hot foods! Dry the chiles to get off some of the juices. Beat 6 eggs and half & half until a bit fluffy. Use a casserole dish and start layering the chiles and the cheese. You can use all Monterey Jack Cheese if you like. I use some cheddar for color. Mix your cheeses together. Layer chiles then cheese, chiles then cheese until chiles and cheese are gone. Try to save some cheese for the top. I use more cheese if needed. After you are finished layering the chile and cheese, pour the egg mixture right on top and over everything. Bake 350 until the cheese is nice and golden brown.
